The menus at Tejas change
with the seasons as well
as the Chef's ongoing creative process.
During
the spring fish runs, look for favorites like Copper River Salmon
and Day Boat Halibut accompanied with various fruit salsas,
sweet yet spicy sauces, or vegetable relishes. In the fall,
we take full advantage of the local farmers' harvest. Look
for preparations such as braised meats, butternut squash bisque, and three-tomato salad.
